Crossing Tables #14: Sudan Unbound
An artist, chef or collective brings together flavours and migration stories in a three-course menu. Every third Thursday of the month at 6:00 p.m. on Plein.
This edition: chefs Ranya and Abdelrahman from Napata. Gather around the Al Seneia, a traditional shared platter, and experience Sudanese dining culture as it is meant to be: together around one table.
A table full of stories
Sudan Unbound is all about coming together. Chefs Ranya and Abdelrahman from restaurant Napata take you into the cuisine of Sudan, with flavours rooted in tradition and connection.
The meal is served around the Al Seneia: a traditional platter shared by small groups. This way of dining represents generosity, equality and meaningful conversation.
On the menu
The table will include dishes such as ta’amiya, Sudanese falafel with herbs and spices, agashi, grilled chicken with Sudanese spices, and slow-cooked aubergine. There is also a vegetarian dish with seasonal vegetables in a creamy peanut sauce. The dinner ends with Sudanese sweets and spiced coffee with cardamom and ginger.

About the partner
Napata is the first Sudanese restaurant in the Netherlands, founded by Ranya and Abdelrahman Adam. Using family recipes, Nubian-Sudanese flavours and dishes made for sharing, they bring Sudanese dining culture to the Netherlands.
This month, chef Abdelrahman from Napata is cooking at Mooncake's Lunch Pop-Up on Plein, where visitors can experience Sudanese cuisine. During Crossing Tables: Sudan Unbound, there is more room for the stories behind the food. The evening is not only about the dishes, but also about the memories, traditions and cultural meaning connected to them.
